Vegetable Khichdi - second best comfort food

Easy steps to make some soul food at home. A good alternative to curd rice!


If kadai is there , good .or you can make use of the cooker itself for that also. Little more work and time consuming. Best way is to buy a cooker and a kadai. 

Now keep all the ingredients ready. What are the veg you want is upto you . If available , put all the three-carrots,beans, and peas. That's all. Nothing else. If you put cauliflower or broccoli, the smell will be different. Not khichdi then. 

Garlic is optional . I don't like it so I don't use . As you both like , ammu and Anand ,go for it . Ginger is needed. And heeng also as it helps in digestion, blocks bloating.
  add 1 spoon of good smelling ghee, at the end,  or else use olive or canola oil. 
The amount of dal is upto you . Some put equal amount of rice and dal. 1:1/2 is my way.

Once the ingredients are ready , take a vessel which will fit inside the cooker , or directly put everything in the cooker. Add rice and dal after washing it ,then vegetables-carrot ,beans,and peas. Put haldi and salt heeng and add double the qty of water. (Rice +dal)*2.
Close the cooker lid. Wait for three vistle. Then lower the gas to medium heat for 5 mins. Then switch off the gas.
Now make the masala. Take kadai, heat it .put 2spoons of oil. Add jeera .once jeera is roasted, add chilly, ginger and garlic . The paste is availble .you can add that also. (Garlic ginger paste). Add onions.
Put haldi,chili powder, little salt and heeng to this. Sauté the mix in low flame . Now add tomatoes. Once the onions have become soft and goldenish, put coriander leaves. Then after a min. Transfer the rice from the cooker to the kadai. Switch off the gas . Mix everything nicely. If it is very hard or thick ,add little water and stir softly. Now add ghee and mix it once. 
Khichdi is ready. You can have it with papad, raita, or pickle.
