Curd Rice a.k.a Thayir Saadam

Best. Comfort. Food. Ever

Curd Rice is every self respecting South Indian's go to food.
In my mom's words - Soooo simple. This is anybody's and everybody's masterpiece :) You can just  add what ever you feel , just the taste you like to have with curd rice! So no need for running here and there for groceries! You need rice , good fresh yogurt,( little fruits, salt,heeng,chilly,ginger....all these are optional)

Some ppl. Like with red chilly seasoning , some like green chilly or no spice at all!

Here we go:

Rice - 1/2 cup for two ppl.
Wash it well. You need double the qty off water or little more (21/2) as curd rice will taste good if rice is cooked well.

Fresh yogurt

Fresh fruits (black grapes ,pomegranate or pineapple) 5-10 pieces.  These are nice colorful ones and not very sour or sweet.

1. Cook rice : Keep rice in a vessel with water. After you start wait for 3 whistles, then keep the flame to medium for 10 mins. Now switch off the gas . Wait for the steam to leave.

2. Seasoning : Now take a kadai. 1 spoon oil with mustard seeds(sarson -in hindi) . Once it starts splutter, add chilly and ginger pieces. Quickly pour it in the rice. Mustard seeds should not get burned , it will spoil the taste.

3. Mix it up : Now add, yogurt and little milk to make the curd mix easily with rice.  This you can prepare  in a cup separately and add . That's easier. Add little heeng in the kadai  while seasoning.(sprinkle a bit) add salt according to taste. 1/2 spoon. Add the fruits and coriander leaves. Mix the rice nicely .

TADA!
